Streusel Filled Coffee Cake

¾ c. sugar                                            1 ½ c. flour
1 ½ tsp. egg replacer mixed with ¼ c. water
¼ c. vegan butter                               ½ salt
½ c. milk                                               1 tbsp. flax
2 tsp. baking powder
Streusel Mixture:
½ c. sugar                                            2 tsp. cinnamon
2 tbsp. melted butter                       2 tbsp. flour
1.       Mix the cake mix.
2.       Layer a greased 8 in. pan with ½ batter, ½ streusel, and then repeat.
3.       Bake at 375 for 25-35 min.
Make it a meal: cantaloupe


Blueberry Streusel Cake

½ c. butter                                          2 c. flour
1 ½ tsp. egg replacer mixed with ¼ c. water
1 tbsp. flax                                          ¼ tsp. salt
½ c. coconut milk                              ¾ c. sugar
2 ½ tsp. baking powder                   2 c. blueberries
Topping:
½ tsp. cinnamon                               ½ c. brown sugar
¼ c. cold vegan butter                     ½ c. flour
1.       Mix together cake adding blueberries last.
2.       In a separate bowl mix together the sugar, cinnamon and flour. Mash in the cold butter with a fork.
3.       Pour into a greased 8 inch pan and top with streusel mixture.
4.       Bake at 350 for 25-30 min.

Apple Cake

3 apples, peeled, thinly sliced      ¾ c. canola oil
4 tbsp. apple cider vinegar           2 tsp. cinnamon
2 tsp. baking soda                          1 ¼ c. sugar
1 tbsp. baking powder                  1 c. white flour
1 c. whole wheat flour
1.       Sprinkle apples with cinnamon in a bowl.
2.       Mix cake batter (add vinegar last) and pour over apples. Gently stir just till they are coated.
3.       Pour into a 13 x 9 greased pan.
4.       Bake at 350 for 45 minutes.
Make it a meal: bananas


Gingerbread

1 1/3 c. flour                                       ½ c. vegan butter
1/3 c. sugar                                         1 c. molasses
1 tbsp. flax                                          ¾ c. hot water
1 tsp. baking soda                              1 tsp. ginger
1 tsp. cinnamon                                  ¾ tsp. salt
1 ½ tsp. egg replacer mixed with ¼ c. water
1.       Mix together for 3 minutes and pour into greased 9 in. pan.
2.       Bake at 325 for 55 minutes.
3.       Dust with powdered sugar on top.

Applesauce Cake

½ c. vegan butter                              ½ c. sugar
1 c. applesauce                                  ½ tsp. baking soda
1 ¾ c. flour                                          1 tbsp. flax
1 ½ tsp. egg replacer mixed with ¼ c. water
½ tsp. cinnamon                               1 tsp. cloves
1 tsp. nutmeg                                    Pinch of salt
1.       Mix all together and pour into a greased 8” pan.
2.       Bake at 350 for 50 min. or till done. Frost if you like.

Pumpkin Bread

3 ½ c. flour                                          2 tsp. baking soda
1 tsp. baking powder                        2 tsp. salt
1 tsp. nutmeg                                     1 tbsp. flax
1 tsp. allspice                                      1 tsp. cinnamon
½ tsp. cloves                                       3 c. sugar
1 c. canola oil                                     2 c. canned pumpkin
2 tbsp. egg replacer mixed with 1 c. water
2/3 c. water
1.       Mix together and pour into 2 greased loaf pans.
2.       Bake at 350 for 90 min.

Leprechaun Spice Cake

2 c. brown sugar                                2 c. hot water
2 tbsp. soft vegan butter                 1 tsp. baking soda
1 tsp. cinnamon                                 ½ tsp. cloves
½ tsp. nutmeg                                    1 tsp. salt
3 c. whole wheat pastry flour         1 tsp. baking powder
1.       Bring sugar, water, butter, raisins, salt, and spices to a boil. Simmer for 5 minutes. Cool.
2.       Mix dry ingredients in.
3.       Bake in a parchment lined loaf pan at 350 for 1 ½ hours.

Chocolate Pumpkin Loaf

¼ c. applesauce                                          1/3 c. cocoa powder
1 ½ c. flour                                                   ½ tsp. cinnamon
¼ tsp. nutmeg                                             ¼ tsp. ginger
1/8 tsp. cloves                                             ¾ tsp. baking soda
½ can pumpkin 15 oz. can                         ¾ tsp. salt
3 tbsp. almond butter                                1 c. sugar
½ c. vegan chocolate chips                        1 tsp. vanilla
1/3 c. plus 2 tbsp. boiling water
1.       Mix together and fold chips in last.
2.       Pour into a greased loaf pan. Bake at 350 for 55-60 minutes. Knife might come out a bit moist from the chips.

Sour Cream Scones

¼ c. vegan sour cream                    1 ¼ c. flour
½ tbsp. zest of one orange             1 ½ tsp. baking powder
¼ c. orange juice                              ½ tsp. salt
3 tbsp. sugar
3 tbsp. cold vegan butter, cut into pieces
Coconut milk and cinnamon sugar for topping
1.       Combine sour cream, orange zest, and orange juice. Set aside.
2.       Mix flour, baking powder, salt, and sugar. Cut in the butter. Stir in sour cream mixture and fruit.
3.       Turn out onto a floured surface and press into a ¾ in. circle. Cut into 10-12 wedges. Brush tops with coconut milk and sprinkle with cinnamon-sugar.
4.       Place on a parchment lined cookie sheet. Bake at 425 for 10-12 minutes.
