Pie
Bottom Layer:
1 c. cooked
carrots 1 c. cooked
celery
1 c. cooked
squash
1 c. lentils:
cooked with vegetable broth (you can
blend 2 leaves of kale into the broth), salt, pepper, and Worcestershire sauce.
1-2 c.
cashew gravy poured on top
Top Layer:
Mashed
potatoes spread evenly
1.
Bake at 350 for 25 minutes, then broil on high
for 5 minutes till potatoes brown a bit.
Make it a Meal:

Pot Roast Dinner

Bouquet Browning Sauce
1.
Add water slowly to the cornstarch so that it is
not lumpy. Pour slowly, whisking constantly, into the juice in a sauce pan.
2.
Add about 1 tbsp. of the Kitchen Bouquet and the
other seasonings.
3.
Bring to a boil, stirring constantly. Simmer 1-2
minutes.
Swiss Steak
with Seitan
Salt, pepper ¼ c. flour
Worcestershire
sauce 1 pkg. Seitan
chunks

crushed tomatoes 1
can water
1 little can
tomato sauce and water
1 sliced
bell pepper sliced

Diced onion chili

1.
Put salt, pepper, and flour on a plate. Roll the
seitan chunks in the flour mixture.
2.
Fry the chunks somewhat, sprinkling with
Worcestershire sauce.
3.
Make the rest of the sauce, adding additional
salt and pepper. Add the seitan.
4.
Cook in a crock pot for several hours.

Potato Almondine
2 handfuls
sliced almonds ½ c. orange
juice
Bread crumbs Flour
Salt,
pepper, old bay seasoning, thyme
Sweet
potato, peeled, sliced, and steamed till almost tender
1.
Toast almonds in a pan till fragrant. Blend in a
blender with breadcrumbs. Add seasonings.
2.
Dip potato slices in flour, then orange juice,
then crumbs.
3.
Fry in olive oil and vegan butter. Place on
cooling rack to keep crisp.

pears, green beans

Casserole
1 Uncle
Ben’s wild rice mix 1/3 c. flour
2 tbsp. dry
minced onion 1 c. coconut
milk
1 ½ c.
no-chicken broth 1 stalk
celery, chopped
4 oz. can
mushrooms 3 tbsp.
nutritional yeast
1 tsp.
Worcestershire sauce 1 pkg. seitan chunks
¼ c. chopped
roasted almonds
1.
Heat the flour, broth, milk, yeast, and
Worcestershire sauce. Whisk it till it boils. Continue to cook 2 minutes.
2.
Pour over everything else in a greased casserole
dish and stir to combine.
3.
Cover and bake at 375 for 45 min. Uncover and
bake for 15 min. more.
Make
it a Meal: Red
potatoes and garlic, strawberries
Ratatouille
2 tbsp.
olive oil 3
large tomatoes, diced
1 onion,
diced ½
tsp. thyme
3 garlic
cloves, minced 1 tsp.
basil
1 eggplant,
diced Salt

red, or orange bell pepper, diced
3 zucchini
cut in half lengthwise, then cut into ½” slices

Cook the onions in the oil about 7 minutes. Add
the garlic and bell pepper and cook another min

Add the eggplant, tomatoes, thyme, and basil.
Bring to a simmer. Cover and simmer 15 min.
3.
Add the zucchini and beans, recover, and simmer
10 minutes more.
4.
Season with salt and pepper.

Beans and Rice
1 c. dry
brown rice, cooked 1 yellow
squash, diced
1 can
drained, rinsed beans 2 c. chopped
kale
Onion and
garlic powder ½ c. corn
2 tsp. apple
cider vinegar 1 tsp. Old Bay
seasoning
2 tbsp. Worcestershire
sauce
1.
Fry the beans, squash, onion powder, garlic
powder, and kale in a little oil.
2.
Add the vinegar, Worcestershire sauce, and corn
and heat through.
3.
Sprinkle the Old bay on the rice. Add salt and
pepper to taste.

Noodles
with Poppy Seeds
½ lb. vegan
substitute for wide egg noodles (ie: broken lasagna noodles), cooked
1 ½ tbsp.
vegan butter 2 tbsp.
poppy seeds
1 tsp. sugar Salt to
taste
1.
Melt the butter, then add the noodles, poppy
seeds, and sugar and stir to combine.
2.
Heat, stirring occasionally, until the noodles
are hot. Season with salt.

Zucchini
Pancakes
1 lb.
zucchini, grated ½
c. flour
1 tbsp.
vegan mayonnaise 3 scallions,
minced
1/3 c. vegan
parmesan cheese Pepper to taste
1.
Mix all together with a fork.
2.
Form patties and fry on both sides.

Squash Bites
2 tbsp.
vegan mayonnaise ½
tsp. salt
1 lb. yellow
squash, cut into chunks ¼ tsp.
pepper
2 c. crushed
rice krispy cereal or cornflakes
1.
Mix mayo, salt and pepper.
2.
Toss squash in mayo to coat and then dredge in
cereal.
3.
Place on a greased cookie sheet and spray with
cooking spray.
4.
Bake at 400 for 20 min.

Chicken Pot
Pie
Optional: 1
pkg. seitan, pieced up small
4-5 c. mixed
steamed vegetables (celery, potatoes, carrots, peas, cauliflower, green beans,
onions, etc.)
1 c. coconut
milk 1/3 c.
flour
3 tbsp.
nutritional yeast 1 ½ c.
vegetable broth
1 tbsp.
Worcestershire sauce Salt and pepper
to taste
1 pie crust
1.
Heat the flour, broth, milk, yeast, and
Worcestershire sauce. Whisk it till it boils. Continue to cook 2 minutes.
2.
Pour over the vegetables and seitan. Season with
salt and pepper.
3.
Put the filling in the pie crust in a pan. You
can make 1 big pie or smaller individual sized ones. Top with a pie crust. Crimp the edges closed
and use a knife or small cookie cutter to make a small hole in the center of
the pie.
4.
Place the pie on a baking sheet and bake at 375
till the crust is cooked through and the mixture is bubbly, about 25-30 min.

Meatballs
Lentil
burger mix OR beef flavor Tofurky
½ jar chili
sauce ½
jar grape jelly
1.
Form balls from lentil burger mix. Place on
parchment lined cookie sheet and bake at 350 for 20 minutes.
2.
Stir chili sauce and grape jelly. Pour over
meatballs in a casserole dish. Cover.
3.
Bake at 350 for 20 minutes more.
Make it a Meal: corn cob, grapes,
funeral potatoes
Chicken
Noodles and Dumplings
2 stalks celery, diced 2 carrots, diced
diced onion (or onion powder) salt and pepper
Worcestershire sauce garlic powder
2- 32 oz. box of no-chicken broth or vegetable broth
1/2 box of whole grain noodles (no egg)
2 c. Bisquick 2/3 c. coconut milk
1.
Bring to a boil the vegetables, broth, and seasoning. Boil 5
minutes.
2.
Mix the Bisquick and milk. Add the noodles to the broth.
3.
Drop the dumplings by spoonfuls into the broth.
4.
Reduce heat to medium low and simmer 10 minutes uncovered.
5.
Cover and cook 10 minutes more.
Make
it a Meal: fruit
salad
Strawberry
Salad
½-1 pkg.
seitan, pieced up ½ red onion
1 pkg.
spinach 1
pkg. romaine
1 pkg.
strawberries, cut up
Dressing:
1 c. vegan
mayonnaise ¼ c. raspberry
vinegar
¼ c. sugar,
or less 2
tbsp. poppy seeds
1.
Toss together.
Make it a Meal:
French bread, scalloped potatoes
Potato Pancakes
3 c. frozen hashbrowns, thawed
salt, pepper, and onion powder to taste
3 tbsp. flour 5 tbsp. water
salt, pepper, and onion powder to taste
3 tbsp. flour 5 tbsp. water
1.
Put the hashbrowns in a bowl and top with seasonings and flour.
Stir.
2.
Sprinkle water over hashbrowns and stir again.
3.
Form into little patties (you should be able to get about 10
from this recipe).
4.
Cook about 4-5 minutes per side on medium high heat in a little
oil.
5.
I like to eat these with applesauce and vegan sour cream, but
the kids prefer ketchup.
