Muffins


Pumpkin Muffin

2 c. flour                                                2 tsp. baking powder
1 ½ tsp. cinnamon                               1 c. sugar
¼ tsp. ea. Ginger, cloves, nutmeg, allspice
¾ tsp. baking soda                               ½ tsp. salt
2 tbsp. apple cider vinegar                 1 tbsp. flax
1 heaping c. of can pumpkin              2 tsp. baking soda
6 tbsp. melted vegan butter      
1.       Mix all ingredients.
2.       Bake in greased muffin tin at 375 for 20-25 min. Makes 12 muffins.
Make it a meal: cantaloupe


Zucchini Muffin

2 c. zucchini, shredded and blended in a blender
2 tbsp. apple cider vinegar                  1 tbsp. vanilla
¼ c. applesauce                                     2 tsp. baking soda
1 tsp. baking powder                            1 tbsp. cinnamon
1 tbsp. flax                                              3 c. flour
1 c. canola oil                                         2 c. sugar
1 tsp. baking soda                                 1 tsp. salt
1.       Mix all together. Makes 24 muffins or more.
2.       Bake at 350 for 20-25 minutes.

Banana Muffin

2 c. whole wheat flour                     1 tsp. baking soda
1 tsp. baking powder                       1/8 tsp. salt
1 c. orange juice                               1 c. sugar
1 c. coconut milk                              1 tbsp. flax
2 ripe bananas, well mashed         2 tbsp. olive oil
1 tsp. vanilla or almond extract
1.       Mix all together. Top with brown sugar and honey.
2.       Bake at 350 for 20-25 minutes.
3.       Makes 12-18. Serve immediately.

Blueberry Muffin

4 c. flour                                               1 c. sugar
2 tbsp. and 2 tsp. baking powder
1 ½ tsp. cinnamon                              ½ tsp. salt
2 c. coconut milk                                 1 tbsp. flax
1 tbsp. egg replacer mixed with ½ c. water
1 c. melted vegan butter                   2 c. frozen blueberries
Topping:
Brown sugar                                       honey
1.       Mix all together. Stir in the blueberries last.
2.       Pour into 24 greased muffin tins.
3.       Sprinkle with brown sugar and drizzle with honey.
4.       Bake at 400 for 25-30 minutes.

Cinnamon Sugar Muffin

1 c. coconut milk                                ¼ c. canola oil
1 tbsp. apple cider vinegar               1 tsp. baking soda
2 c. flour                                               1 tbsp. flax
1 tbsp. baking powder                       ¼ c. sugar
1 tsp. salt
Filling:
1 tbsp. cinnamon                                ¼ c. sugar
1.       Mix all the ingredients except for filling.
2.       Fill cups with 1/3 with batter and sprinkle ½ of the filling. Makes 12 muffins.
3.       Add remaining batter and then remaining filling.
4.       Bake at 400 for 20-25 min.

Carrot Muffins

2 tbsp. apple cider vinegar             2 tsp. baking powder
¼ c. applesauce                                ½ c. sugar
½ c. vegan butter                             1 tbsp. flax
1 c. whole wheat flour                    1 c. grated carrots
1 c. white flour                                  ¼ tsp. salt
1 tsp. cinnamon
1 c. blended apples or applesauce
1.       Blend ingredients and add carrots and apples last. Top muffins with cinnamon.
2.       Makes 12 muffins. Bake at 375 for 25 minutes.
Make it a meal: grapefruit


Apple Streusel Muffins

2 c. flour                                                 1 tbsp. baking powder
1 tbsp. flax                                             ½ tsp. cinnamon
1 apple (finely chopped)                     1/8 tsp. salt
½ c. applesauce                                      1 c. coconut milk
Heaping ½ c. firmly packed brown sugar
6 tbsp. melted, cooled vegan butter
Streusel topping:
½ c. flour                                                ¼ tsp. cinnamon
3 tbsp. vegan butter                             2 tbsp. brown sugar
1.       Make streusel by mixing flour and cinnamon and then cutting in cold butter with. Mix in brown sugar (should look like wet sand).
2.       Mix other ingredients just till mixed.
3.       Spoon batter into muffin tins and top with streusel and maybe some honey.
4.       Bake at 400 for 20 minutes.
Make it a meal: peaches


Oatmeal Muffins

1 ½ c. apple juice                               1 c. applesauce
1 c. white flour                                   1 c. sugar
1 c. whole wheat flour                      1 c. oat bran
2 c. oatmeal                                        1 tbsp. flax
1 ½ tsp. baking soda                         ½ tsp. cinnamon
¼ each tsp. ginger, nutmeg, cloves, allspice
1.       Mix ingredients all together. Makes 18 muffins.
2.       Bake at 350 for 35 minutes.
Make it a meal: applesauce


Peanut Butter and Banana Muffins

1 c. dark brown sugar                       ½ c. peanut butter
1 tbsp. flax                                          ½ c. banana puree
½ c. carrot or cauliflower puree
1 c. whole wheat flour                     2 tsp. baking powder
1 tsp. baking soda                            ½ tsp. salt
1.       Stir all together except ½ c. sugar. Stir in remaining ½ cup at the very end and only slightly mix in.
2.    Bake at 350 for 15-20 minutes. Makes 12.
